I am always looking for quick and easy recipes. Especially recipes for breakfast. I don’t mind eating a bagel or yogurt everyday for breakfast. But I feel bad for Kinsley, she needs more of a variety! I looked up a few waffle recipes on Pinterest and got inspired by several banana and egg recipes and created my own version!
Kinsley was gifted a Mickey Mouse waffle maker for her first birthday so I wanted an easy waffle recipe to make in it! She loves cinnamon so I knew if I added that to anything with a banana she would be in heaven. Oh boy, was I right! This waffle recipe can also be easily made on a griddle or a pan on the stove. I like the ease of pouring it in the waffle maker and setting a three minute timer. However, I am not a fan of cleaning the waffle maker!
1 Ripe banana
1 tsp cinnamon
Heat waffle maker. Spray waffle maker with non-stick spray. Mash the banana in a bowl. Add the eggs and cinnamon. Mix together. Pour mix in to waffle maker. Cook for three minutes.
For your enjoyment, here are a few photos of Kinsley enjoying her Mickey Mouse waffle. Yes, she ate the entire waffle along with some fruit. I truly believe she is such a great eater because we chose to do baby led weaning when introducing her to solids.
